The very best soups to keep you warm this Winter!
As the weather here in Wisconsin gets colder, and we add layers to our bodies and bed. We also find ourselves making comfort foods. Including soups! Soups are the best way to warm up after a chilly adventure outside, along with a way to use up food in your pantry and fridge.
I freaking love all these soups, and they are a staple in our home when the weather starts to get chilly!
ZUPPA TOSCANA (Copy Cat Olive Garden Recipie)
I love everything about this soup, from the potatoes to the bacon! Plus, I added WAY too much red pepper flakes! Which helps you warm up FAST! And if your family won’t eat veggies, especially kale, this will for sure get them too!
One thing to note is that we DO NOT add cream to our recipe. We did once and didn’t like it. So we omit it, and it’s still yummy!
STUFFED PEPPER SOUP
I LOVE this soup a million times more than chili! Justin is a major lover of chili and asks for it every week from Fall-Spring. But I am not as huge of a fan, so I make this instead! It makes us both happy….at least I think so!
NOTES: I don’t pre-cook the rice. I just dump it in and add more broth. I also LOVE the fire-roasted tomatoes in this, along with dice! You can also use what you have on hand! OH, I also put a few red pepper flakes to make it a bit spicy!
ROASTED RED PEPPER AND TOMATO SOUP
I made this soup when I had to use up some tomatoes and peppers! I used Red and Orange Peppers! The only thing I did not do that is a MUST if you don’t use canned tomatoes is PEEL THE TOMATOES! I didn’t do this, and it made the soup a strange consistency!
